Our restaurant in Palma is located in the heart of Santa Catalina, and is divided into three areas: the bar, the restaurant and the terrace, a small oasis in the middle of Palma.
At Sa Fumata, we’re committed to a different way of understanding smoked gastronomy, offering unique and delicious dishes that will surprise you with their extraordinary flavour. We like to play with flavours and textures to surprise you with every bite. Our main objective is to create an exclusive experience, where each dish is an explosion of flavours and a combination of carefully selected ingredients that will not leave you indifferent. We often use this technique just to give a light smoky, elegant touch to meats and fish, and then give them the final touch on the grill.
In our (wonderful) smoked world there’s also room for other types of gastronomy and we have dishes in which we have experimented with other techniques.
Don’t confuse smoked gastronomy with Texas smoke BBQ, although they have similarities our technique seeks the properties of smoked cuisine in a more elegant and subtle way.

In our kitchen, we use the smoking technique to enhance the flavours and textures of our fish. This technique consists of subjecting the fish to a slow, controlled cooking process in a smoky environment, which gives them a distinctive smoky flavour and a juicy, tender texture. Our smoked fish are an explosive mixture of flavours and textures that you can only enjoy in our restaurant in Palma de Mallorca.
